PUMPKIN OATMEAL COOKIES 
1 c. brown sugar
1 c. canned pumpkin
1/4 c. corn syrup
1/4 c. oil
1 tsp. vanilla
1 c. sifted oat flour blend
1 tsp. baking soda
1 tsp. baking powder
1/4 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. ginger
1 c. plus 2 tbsp. quick oatmeal
1/2 to 1 c. raisins or dates
1/2 c. chopped nuts (optional)

Mix sugar, pumpkin, corn syrup, oil, and vanilla. Add flour, soda, baking powder, and spices; mix well. Stir in oatmeal, raisins or dates, and nuts. Drop by spoonfuls on greased baking sheet. Bake at 375 degrees for 10 to 12 minutes. Makes about 3 dozen cookies (there are no eggs in this recipe).

They turned out great! I added 1/2 the sugar and no syrup and twice the cinnamon and nutmeg and it was great! Less sugar so yummy, I also use fresh pumpkin left for halloween they were so awesome. 5 stars! Lucca :)
