DELUXE PINEAPPLE MEAT LOAF 
About 1 hour and 15 minutes before serving: Start heating oven to 350 degrees. In a 9 inch shallow baking pan or casserole dish, thoroughly mix together:

1 lb. ground beef
Bread cubes made from 2 slices of day old bread
2 egg whites
1/4 c. onion, minced
1 tsp. salt
1 (8 1/2 oz.) can Dole's crushed pineapple, undrained
(Dole's contains less liquid than other brands)
1/8 tsp. prepared horseradish
2 tbsp. ketchup

Form into a long narrow loaf about 9 x 5 x 2 inches. The mixture will be soft. If you like a slightly firmer loaf, add another 1/2 to 1 slice of bread crumbs. Then bake 60-70 minutes, or to desired degree of doneness.

Meanwhile, stir together a sauce of 2 tablespoons ketchup and 1/4 cup orange juice.

To serve: Loosen loaf from bottom of baking pan, transfer to a platter and cut into 12 slices. If you have used a casserole dish, not any need to transfer. Take it right to the table as is. Top with ketchup and orange juice sauce. Makes 6 servings of 2 slices each.
