1 kilo (about 2 lbs) pork belly
1/4 (about 1/2 lb) pork liver
3 pcs. carrots cut into cubes
4 pcs. potatoes cut into cubes
1/2 cup soy sauce
8-10 pcs. calamansi (juice)
1 bulb onion
1 clove garlic
1 pc. laurel leaf or bay leaf
1 med. red bell pepper, cut into strips
1/4 tsp. sugar
1 can tomato sauce
1/2 cup water

Marinade pork and pork liver in soy sauce and calamansi juice. Set aside for 1 hour.

Sauté garlic and onion in oil. Add the pork and simmer for 20 minutes. Add the carrots and the potatoes. Add the tomato sauce. Stir gently. Bring to a boil. Add bay leaf and bell pepper. Cover for 3 minutes. Add water and sugar. Add salt and pepper to taste. Serve when meat is already tender.
