1/4 c. chopped onion
1 tbsp. butter
1/2 c. water
3-4 tbsp. white vinegar
1 tbsp. Worcestershire sauce
1/4 c. lemon juice
2 tbsp. sugar, preferably brown sugar
2 tbsp. honey
1 c. chili sauce
1/2 tsp. salt
1/4 tsp. black pepper
Deli-style bologna, sliced in 1/2 inch thick portions
White bread for serving

For the sauce (makes about 2 cups) : In a large pan, saute onion in butter until the onion just turns brown. Add the water, vinegar, Worcestershire sauce, lemon juice, sugar, honey, chili sauce, salt, and pepper. Simmer for 20 minutes over moderate heat until slightly thickened.

Meanwhile, cook the bologna on both sides over a charcoal grill. Remove from heat. Place the bologna in the warm barbecue mixtture and marinate about 20 minutes. Remove from marinade and serve between slices of white bread, with coleslaw or baked beans on the side, if desired.
