CRANBERRY GELATIN SALAD 
1 (3 oz) pkg strawberry Jell-O
1 lb. cranberries
2 cups sugar
1 large apple, peeled and cored
1/4 lemon, with peel (seeds removed)

Dissolve 1 package strawberry gelatin as directed. Refrigerate and allow to set.

In a medium saucepan, simmer 1 pound cranberries over very low heat, cooking until skins pop and cranberries are tender; mash slightly.

Allow mixture to cool for 5 minutes, then add 2 cups sugar. In a food chopper or processor, coarsely grind 1 large apple and lemon.

Combine gelatin mixture, cranberries, apple and lemon.

Rinse a mold in cold water, then pour in mixture. Refrigerate for at least 2 hours or until set.

Variation: Stir in a small can of drained fruit cocktail as the mixture begins to congeal in the refrigerator before it has had a chance to fully set.
