6 pods okra, sliced
1 1/2 lb. cleaned shrimp
3 lb. chicken
1-2 cans oysters
3 sprigs parsley, minced
2 qt. hot water or broth from chicken
1 qt. tomatoes
5 cloves garlic
1-2 cans crab meat
2 tbsp. cooking fat
2 onions, chopped
2 tbsp. file' powder
Salt & pepper
1 lime
1 tbsp. cayenne pepper
2 tbsp. flour

Cook chicken in crock pot overnight. Cool. Debone and skin. Skim off fat from liquid. Strain liquid. Save broth. Make Roux, by browning flour in cooking fat. Add spices. Add onions and saute. Add tomatoes, parsley, broth, okra, seafood and chopped chicken. Cook on slow simmer in large pot 1/2 hour. Remove from fire and add file' powder and juice of 1 lime. These last 2 ingredients can be omitted without harming the gumbo. Yum! Yum!
