SOLE MUNIERE 
It took me a while to figure this one out. It is like the sole Muniere prepared at the original Fisherman's Galley on Yosemite. It is a little time consuming, but the results are well worth it! 2-3 eggs Flour Salt and pepper Oil/butter for frying

Wash, dry, lightly salt and flour sole. Separate eggs. Beat whites until soft peaks form. Then beat yolks with 1 tbsp. water. Combine whites and yolks. Dip sole into egg and fry in oil/butter over medium heat until lightly brown. Top with lemon butter sauce and enjoy.

LEMON BUTTER SAUCE:

1 stick (1/2 c.) butter
3 tbsp. lemon juice

Melt half the butter. Add lemon juice. Add small bits of unmelted butter until a nice sauce results (all the butter may not be needed).
