1 lb. lean pork butt, sliced
2 cloves garlic, crushed
1 tsp. salt
3 bay leaves, crumbled
1/4 tsp. pepper
1 med. onion, sliced
1/2 c. water
4 oz. tomato sauce
2 tsp. pimento, chopped
1 c. frozen peas (cook using pkg. directions)

Saute pork and garlic until brown. Mix salt, bay leaves, pepper, onions, and pork, continue cooking for 5 minutes. Add water and simmer until water evaporates. Taste for seasoning. Add tomato sauce, pimento, simmer for 1 minute. Add cooked peas, stir carefully. Serve hot.
