APPLE CELERY SLAW 
12 ribs of celery
3 whole apples (red delicious are best)
6 tbsp. mayonnaise
4 tbsp. sparkling apple cider
3 tbsp. red wine vinegar
2 tbsp. whole grain mustard
2 tbsp. olive oil
1 1/2 tsp. Splenda
1 cup raisins (optional)

Combine mayonnaise, sparkling cider, red wine vinegar, whole grain mustard, olive oil, and Splenda to make dressing and place in the refrigerator to chill.

While dressing is chilling, clean and top off the celery. Then thinly slice into about 3 inch strips, clean, peel, and core apples and thinly slice, combine apples and celery in a bowl, and sprinkle with lemon juice to add a little citrus. Add the chilled dressing, as little or as much to taste and toss coating apples and celery well. If desired, add 1 cup of raisins for added texture and flavor.
