SICILIAN MEAT ROLL 
2 beaten eggs
3/4 c. soft bread crumbs
1/2 c. tomato juice or sauce
1 tbsp. parsley
1/2 tsp. oregano
1/4 tsp. salt
1/4 tsp. pepper
2 lbs. ground beef
8 thin slices boiled ham
6 oz. shredded Mozzarella cheese
3 slices Mozzarella

Combine eggs, crumbs, juice, parsley, oregano and spices. Stir in meat; mix well. On foil or waxed paper, pat meat out into a 10" x 12" rectangle. Arrange ham slices on meat, leaving small uncovered margin around edges. Sprinkle shredded cheese over ham. Starting from narrow end, carefully roll up meat. Seal edges and ends well. Place roll, seam side down in 9"x13" pan. Bake at 350 degrees for 1 hour 15 minutes (or until done). Place cheese slices on top. Return to oven for 5 minutes until cheese melts. Let cool approximately 10 minutes before slicing.
