OLD FASHIONED BANANA PUDDING 
2 c. scalded milk
1/2 c. sugar
1/3 c. flour
1/2 tsp. salt
4 eggs, separated
3 tbsp. butter
1 tsp. vanilla
1/4 tsp. lemon flavoring (optional)

Scald milk (heat to just boiling) in medium saucepan. In another saucepan mix sugar, flour and salt. Add hot milk and stir well. Cook over low to medium heat, stirring constantly until mixture thickens. Separate eggs and set whites aside. Beat the yolks and then add a small amount of hot pudding to the yolks and stir well. Add the egg mixture to the pudding sauce and stir quickly until well blended and no lumps of egg yolk appear.

Return to heat and cook for an additional minute or two. Remove from heat and add butter and vanilla and lemon flavoring. Layer vanilla wafers and bananas in large ovenproof bowl. Pour half of sauce over layer. Repeat.

MERINGUE:

Beat egg whites with 1/4 cup sugar and 1/8 teaspoon vanilla until stiff peaks form. Spread over pudding and brown in hot oven for just a few minutes, careful not to burn. Cool and serve.
