SUPER EASY CROCKPOT GREEN CHILE
CHICKEN BREASTS

3-4 boneless skinless chicken breasts, frozen
1 large can Las Palmas green chile enchilada sauce
1 can Campbell'S Cream Of Chicken Soup
Monterey Jack (or your choice of cheese) shredded

Put enchilada sauce and soup in crockpot and use a whisk to blend well. Add frozen breasts and scoop some sauce over the top to cover them. Cook on low all day.

Serve over rice, noodles, tortillas, etc. Sprinkle cheese over the top. May have to microwave for several seconds to encourage the cheese to melt.

This super easy recipe is perfect for us busy people and fills the house with wonderful smells.

Since microwave ovens vary in power, you may need to adjust your cooking time.

Our family loves this meal. I put it over white rice. My kids love flour tortillas so I put a tortilla in the microwave for with some shredded jack cheeese and melted the cheese in about 20 seconds on high then mix the chicken mixture and some rice together and put it on the tortilla and rolled it up like a burrito. My picky eaters loved it.

Awesome recipe and so easy! Started the slower with the 3 ingredients at 8am. By 6pm I had an excellent enchilada filling and sauce. Took the chicken breasts out, shredded the meat, rolled it in flour tortillas with some shredded Mexican cheese blend. Made about 8 large enchiladas. Placed in a baking dish and pored most of the leftover sauce on top. Baked at 325°F for about 10- 15 minutes to melt cheese! My new favorite!

This is quite simply fantastical!! I had red enchilada sauce on hand so I used that instead of the green. I also had less tortillas than I thought so I put some rice in the cooker and substituted about 1/4 c. of the water for salsa. Topped it with olives, cheese and sour cream and my whole family was in love! I also cooked it on high for 4 hours instead of low for 8 (I was time crunched). Going for seconds now!

I'm making this for dinner tonight although I tweaked the recipe a bit :P I chopped up the chicken into tiny bits and threw in some diced green chiles along with the green chile enchilada sauce and cream of chicken soup. It already smells AMAZING!! If only I didn't have to wait 3-4 hours to enjoy! haha Thanks so much for posting this! Helped me clean out my cabinets and freezer. I was especially surprised I had these ingredients on hand! Dinner made easy! :)

I love this recipe. I'm trying to get more into the habit of cooking with a crockpot so this worked out well. I chose to use chicken breast's and legs and it came out deliciously. The chicken fell right off the bone of the chicken leg; I served it over chips and made nachos adding sour cream, Monterey Jack cheese, and olives. Even kids will love it, my best friends nieces and nephew ate up the whole bowl I gave them and were asking for more.
