CHEESY CHICKEN FAJITA HOT-DISH 
1 can tomato soup
milk (1 can full from tomato soup can)
1 large green bell pepper (thinly sliced)
1 medium yellow onion (chopped)
2 large boneless skinless chicken breasts (defrosted and thinly sliced)
cooking oil
4 cups shredded cheddar cheese
3 cups spiral egg noodles
1/2 teaspoon salt
1 teaspoon pepper
1 teaspoon cumin
3 teaspoon fajita seasoning mix

In a large skillet, generously add cooking oil, chicken, green bell pepper, and onion over medium-high heat. Cover. Stirring occasionally, fry until chicken is fully cooked, and the onions and peppers are tender. Drain, place back in pan, and set aside.

In a large pot, add water and bring to a boil. Add noodles to the boiling water. Stir occasionally to prevent from sticking to the bottom. While Noodles are boiling, add tomato soup, milk, salt, pepper, cumin, and fajita seasoning mix into a medium pot, cook over medium-high heat until hot stirring often, then lower heat to medium. Be careful not to allow to boil over. Add shredded cheese and stir until fully melted and mixed into soup. Once cooked, remove from heat. When the noodles are done, drain and rinse. Pour the tomato soup mix into the large pot, and add the chicken, onion, and pepper mix into it and stir and heat over medium heat until hot. After that, add the noodles back into the mix and stir well. when done, remove from heat and let sit for about 5 minutes to thicken and cool.

Serve in a bowl and garnish with sour cream.

Makes 3 - 4 servings.

This is one of the many gamer foods I have made when I don't have much in the cupboards. Just pulled everything out onto the counter and stared at it until the idea popped in my head. Hope you guys like it.

This stuff is really good! I also threw in a can of Ortega chilis and Goya sauzon seasoning to take it up a bit. Eating leftovers now...mmmm good!
