4 eggs 1 3/4 c. pumpkin or squash 1 c. sugar 3/4 c. brown sugar, packed 1 c. vegetable oil 2 c. flour 1 tsp. cinnamon 2 tsp. baking powder 1 tsp. baking soda 1/2 tsp. ginger 1/2 tsp. nutmeg 1/2 tsp. salt Beat eggs. Add pumpkin, sugars and oil; beat well. Add remaining ingredients, mix well. Spoon into 24 paper lined cupcake tins. Fill 3/4 full. Bake in 350 degree oven for 20 minutes. Cool on racks and frost with the following. CREAM CHEESE FROSTING: 3 oz. cream cheese 1/4 c. butter 1 tsp. vanilla 2 c. powdered sugar Combine all ingredients and beat until fluffy. |
