“CHEESY HASH BROWN POTATO CASSEROLE” IS IN:

CHEESY HASH BROWN POTATO
CASSEROLE
 
2 lb. hash browns, defrosted
1/2 cup (1 stick) melted butter
1 tsp. salt
1/4 tsp. pepper
1/2 cup chopped onion
1 can cream of chicken soup
1 cup milk
1 cup dairy sour cream
2 cups grated sharp cheese (Colby or cheddar)

Mix above ingredients and put in a 9x13-inch pan.

TOPPING:

2 cups crushed corn flakes (can use Ritz crackers)
1/2 cup (1 stick) melted butter

Melt butter and add corn flakes to mix. Sprinkle topping over potatoes and bake at 350°F for 45 minutes.

I have used this recipe for years. I have added chopped green, red peppers for color. And chopped jalapeno or red pepper flakes to kick it up. the next time I added chopped ham to make it a complete meal.

I LOVE this dish! I vary it a little. I always double the recipe. Also, I fry 1 pound of bacon, draining the grease on paper towels, then crumbling it up and mixing it in. Instead of using 2 cans of crm soup, I use 1 can crm mushroom, and 1 can crm chicken. I ALWAYS get asked the recipe!!!

I use the shredded hash browns because they don't take as long to cook and I put fried onions on top! It is soooo good and has become a family favorite for Christmas.

After I introduced this to my daughter-in-law, she loved it so much she added browned ground meat and a can of corn, and served it as a main dish. We've all experimented with different soups, different brands/types of frozen hashbrowns, and different crunchies as toppings. I don't think it can be messed up!

I agree - you can't really mess this one up. I leave the milk out. I usually double it and add bacon. I also have done it in a slow cooker. I also don't bother with the topping but I'm tempted this tome to try Leslie's idea of cheddar sun chips.... YUMMY

Crockpot uses the same mixture directions. Cook on low 4-5 hr.

My husband accidentally picked up frozen tator tots instead of frozen cubed hash browns and I didn't discover it until I went to make it Easter morning. Used them anyway-did not turn out well. Maybe if the recipe is modified correctly, it might have worked but frozen tater tots are made with an oil coating which strangely "fused" with the cheese and hardened at the bottom of the casserole dish.

I used to work in a French fry factory where they made those and trust me those tater tots are deadly for grease! :)
