“IRISH POTATO CANDY” IS IN:

IRISH POTATO CANDY 
1/4 cup (1/2 stick) butter, softened
4 oz. cream cheese, softened
1 tsp. vanilla extract
1 (1 lb.) box confectioners' sugar
1 (7 oz.) bag (about 2 1/2 cups) flaked coconut
ground cinnamon

Cream together butter and cream cheese in a large bowl. Beat in vanilla and confectioners' sugar, then mix in coconut flakes. Roll mixture between hands to form walnut-sized balls. Roll balls in cinnamon and refrigerate until firm.

Note: Use good quality, regular cream cheese.

Makes 30 to 36 balls.

This is the only recipe you need. For a richer version roll in cocoa powder. They are to die for, or dip in chocolate for a coconut cream egg.
