1/4 c. (1/2 stick) butter, softened 4 oz. cream cheese, softened 1 tsp. vanilla extract 1 box (16 oz.) confectioners' sugar 1 bag (7 oz.) (about 2 1/2 c.) flaked coconut Ground cinnamon Cream together the butter and cream cheese in a large bowl. Beat in the vanilla and confectioners' sugar, then mix in the coconut. Roll mixture between hands to form walnut-sized balls. Roll balls in cinnamon and refrigerate until firm. Yields 30-36 balls. Use good quality, regular cream cheese. |
