1 c. small broccoli florets, fresh 1 sm. zucchini, sliced 1 sm. red bell pepper, cut into strips 1/2 c. sm. peas 1/4 c. butter, unsalted 1 c. Half & Half cream, warmed Fresh ground pepper to taste 1 lb. spaghetti or other pasta, cooked and drained Grated Parmesan cheese In a large skillet, saute broccoli, zucchini, red pepper and peas in butter until crisp tender. Add Half & Half and black pepper; cook briefly until slightly reduced. Serve over spaghetti. Sprinkle Parmesan cheese. Makes 4 servings. |
