1 1/2 lbs. zucchini
4 eggs
1 lb. Jack cheese
1 c. milk
2 tsp. baking powder
2 tbsp. flour
1/2 c. parsley, dried
1/2 tsp. fine herbs
1 lg. can diced Ortega chilies
1. Slice zucchini 1/4 inch and then in half. Boil 2 minutes or microwave 5 minutes, cool.
2. Mix all ingredients together.
3. Grease a 13 x 9 inch baking dish then coat the bottom with bread crumbs.
4. Pour mixture into baking dish.
5. Bake at 350 degrees for 35 to 45 minutes.
