FRIED CAT FISH 
Cat fish fillets
2 tbsp. prepared mustard
2/3 c. yellow corn meal
1/2 tsp. salt (optional)
1/2 tsp. black pepper
1/4 tsp. ground red pepper

Spread fillets with thin coat of mustard. Combine other ingredients; add fillets, coating well. Fry in skillet of hot oil (375 degrees) for 4-5 minutes. Turn; repeat.

If using deep fryer, add limited number of fillets.
