ZUCCHINI CHOCOLATE MOCHA CAKE 
4 eggs
3/4 c. oil
1 tsp. vanilla
2 c. grated zucchini
1 (4 1/2 oz.) chocolate instant pudding
1 chocolate cake mix
1 1/2 tsp. instant coffee

Beat eggs slightly. Add oil and vanilla. Beat until smooth. Add zucchini and chocolate pudding, mix thoroughly using low speed. Add coffee and cake mix, blend until moistened. Continue mixing on medium speed for about 5 minutes. Bake at 350 degrees for 1 hour and 10 minutes. Cool for 10 minutes before taking out of pan. Cool on rack.

This recipe is wonderful. Having people in my home who won't eat anything green unless it is lime-flavored, I try to hide veggies wherever possible. My wife and mother in law both loved this cake. I did have to modify a little because my wife is diabetic. I used a sugar free cake mix, and two packages of sugar free pudding. May have been because of the substitutions, but it only took 30 minutes to be fully cooked. Any richer, and I would have had to call this brownies, not a cake. Making the second batch as I type, the first one was gone within two days.

Baked for 50 minutes in two 8 inch round pans. Way over baked. Flavor is good though, away from edges.
