BAKED BEANS IN A CROCK POT
1 1/2-2 lb. yellow eyed and/or pea beans
1/2 lb. thickly sliced bacon or lean salt pork
water
1 tsp. baking soda (for soaking water)

Place beans in a large pan, cover with cold water and add baking soda. Cover pan and soak several hours or overnight. Bring beans to a boil, then simmer for 10 minutes. Drain.

Mix together:

2/3 c. molasses
8 tbsp. brown sugar
3 tsp. dry mustard
1 tsp. salt
1/2 tsp. pepper
1 peeled onion

Place 1/2 the bacon in the bottom of a Crock pot. Add drained beans and the molasses mixture. Top with the remaining bacon. Add 1 peeled onion (whole).

Cook on medium setting for 10-12 hours or overnight. If more liquid is needed, add water as required.

Note: If salt pork is used, you may slice in 1/4-inch slices through the salt pork and down to the rind (no need to slice through the rind). Place the salt pork over the beans, slightly submerged.

Hi Christine,

Sorry that this simple kind of recipe doesn't work for you (I've modified the recipe to be more helpful). Feel free to use 1/4-1/2 pound (or more) of bacon, as it's really just a matter of choice, and left up to the cook.

Yes, the onion is left whole. It's meant for flavor, and will break down during the cooking.

This is great! My grandmother used to use similar recipe but in bean pot - this is awesome and so easy in crockpot. Loved them! Thanks.

Just started my baked beans, hope they come out yummy!! Really looking forward to them! I thought the recipe was really easy... hope not too easy. I cut up a half a lb of bacon into bite size pieces (maybe 3/4 lb lol)
