SPINACH FETA QUICHE
 

6 c. fresh spinach
1 unbaked 10 in. pie shell
1 tsp. basil
1 c. grated or crumbled Feta cheese
1 1/2 c. grated Cheddar cheese
1 tbsp. unbleached white flour
4 eggs
1 1/2 c. light cream
Dash of paprika

Preheat oven to 400 degrees. Steam spinach, press out excess water. Spread spinach on bottom of pie shell and sprinkle basil over it. Mix together Feta and Cheddar cheeses in medium size bowl. Toss flour into cheeses and spread over spinach in pie shell. Beat eggs well, add cream and pour over cheese. Sprinkle with a dash of paprika. Bake for 15 minutes. Then lower heat to 325 degrees. Bake for 25 to 30 minutes longer until golden and puffy. Allow to set for 10 minutes before cutting.
