AUTHENTIC HONDURAN FOOD
 

2 c. leftover cooked meat (beef, pork, or chicken)
1 lg. onion, chopped
1 can refried beans
2 lg. cans tomato sauce
1 tbsp. lemon juice
3 tbsp. oil
Shredded lettuce
Cheddar cheese, grated
12 sm. tortillas
4 eggs, poached
Tabasco (optional)

Cut up the meat and heat in 1 tablespoon oil in a skillet. Add 1 can of the tomato sauce. Heat until warmed through. Warm the other can of tomato sauce with the lemon juice in a saucepan. In a separate skillet, with 1 tablespoon oil, mash the refried beans, and heat until warmed through. Wrap the tortillas in a damp cloth and warm in the oven or microwave. Keep warm.

To assemble one portion, spoon a little of the plain tomato sauce on a plate. Top with one tortilla. Cover that tortilla with the meat sauce. Sprinkle some chopped onions on top. Place a second tortilla on top of the meat layer. Spoon refried beans on this tortilla. Sprinkle onions and some grated cheese, and spoon some of the plain tomato sauce over this. Dip the third tortilla in the plain tomato sauce and place on top of the bean layer. Place one poached egg on this. Spoon some more of the plain tomato sauce over the egg, and sprinkle a few more onions and grated cheese on top. You may sprinkle a few drops of Tabasco on top if you like it hot. Cover the stack with shredded lettuce.

Repeat three more times. This will make 4 generous servings, very filling. Serve immediately while warm.
