1/2 c. olive oil 1/2 c. wine vinegar 1 tbsp. Dijon mustard 1 tsp. fresh dill 1 scallion, minced 1/4 tsp. oregano 1/4 tsp. thyme 2 fresh basil leaves, torn up or 1/4 tsp. dried basil 2 tbsp. lemon juice Pepper to taste Place in a jar and shake well. To make a Creamy Vinaigrette, add 2 tablespoons sour cream to above ingredients and shake well. Plain Vinaigrette also can be used to marinade meat, fish or fowl. Makes 1 1/4 cups. |
