ALMOND OATMEAL COOKIES 
3/4 c. butter, softened
1 c. packed brown sugar
1 tsp. almond extract
1 c. all-purpose flour
1/2 c. finely chopped blanched almonds
1 tsp. baking soda
1/2 tsp. salt
2 c. quick cooking oats (not instant)

Beat first 3 ingredients and 3 tablespoons water together until smooth. Mix flour, soda and salt and stir into mixture. Add oats and nuts; mix well with spoon or hands. Drop by teaspoonfuls onto greased cookie sheets and press down slightly. Bake in preheated 350 degree oven 12-14 minutes. Makes about 5 dozen.

These are very good - even better when I added about a cup of raisins. Easy, simple to make, not even egg needed, nothing added that I can't spell ;-) ..I topped them off with a whole almond :-)
