EASY DARK CHOCOLATE CAKE
1/2 cup cocoa
milk (see note below)
4 tablespoons Crisco or butter
1 cup sugar
1 egg yolk
1 cup all purpose flour
1/2 teaspoon salt
1 teaspoon vanilla
1 teaspoon baking soda

Preheat oven to 350°F.

In a 1 cup measure, put cocoa powder; add a small amount of hot water and stir until cocoa dissolves. Fill remainder of measuring cup with milk to bring the measurement up to 1 cup total.

Combine flour, salt and baking soda, mixing well. Set aside.

Beat shortening or butter and sugar, add egg yolk, beating for one minute. Stir in vanilla and remaining ingredients.

Mix for one minute. Turn batter into a buttered brownie pan which has been lightly dusted with cocoa (shake out any excess cocoa).

Bake for about 40 minutes or until cake tests done.

Thanks so much for this recipe -- I used a whole egg (instead of just the yolk) and sprayed the pan w/nonstick cooking spray (instead of dusting it with cocoa) and it turned out awesome despite my tweaking. Like the name of the recipe says -- it's incredibly 'easy'. I went the easy route with the frosting too -- and just used a canned whipped chocolate one. The result was just as good as any chocolate cake I've gotten from the bakery and much better than a boxed mix. This is going to be a staple for me from now on -- thanks again!

Delicious! I used this recipe for cupcakes and only made a half recipe, which amounted to 6 cupcakes. Some of the white slipped in when I was putting the yolk in (and yes, I used half a yolk for half the recipe!) but there was no problem. It took around 22 minutes to cook the cupcakes in my oven. Frosted with a mocha icing and they were amazing! Definitely a recipe I'll keep around for a while. Thank you! :)

I also make a hot water chocolate cake my mom taught me many years ago and do the chocolate icing with strong cold coffee for a mocha taste. Really good!

Decadent and super chocolatey. I used my slightly smaller than 9x13-inch Pyrex for a mini sheet cake with a chocolate chip frosting recipe I found on here as well and what a treat this was. The batter was pretty dense but baked up perfectly. Subbed half & half for the milk.
