1 1/2 cups flour 3/4 cup sugar 1 1/2 tsp. baking powder 1 t. cinnamon 1/2 cup milk 1/3 cup butter, melted* 1 egg, slightly beaten 1 cup finely chopped apples
Heat oven to 375°F.
Combine flour, sugar, baking powder and cinnamon in medium bowl. Add all remaining ingredients. Stir just until flour is moistened. Spoon batter into muffin liners.
This recipe is great - easy to make, and delicious!

Fine recipe we found when looking for recipe to use the pulp from our juicer. We used this recipe as is, using the pulp from a juicer instead of diced apples (we used about 2 small bags of apples that were cored and one pomegranate's arils). We doubled the fruit content and the recipe. The result was a tasty and dense fruit bar'ish mufffin which was very moist and apple tasting. We will use again.
