DEEP - FAT FRIED SCALLOPS OR
OYSTERS
 
1 lb. fresh or frozen scallops or 1 pt. shucked oysters
1/4 c. all-purpose flour
1/4 tsp. salt
Dash pepper
1 beaten egg
1 tbsp. water
2/3 c. fine dry bread crumbs
Shortening or cooking oil for deep-fat frying

Thaw scallops, if frozen. Drain oysters. Dry scallops or oysters with paper toweling.

Combine flour, salt and pepper. Roll scallops or oysters in flour mixture. Combine egg and water. Dip flour coated seasoned in egg mixture, roll in bread crumbs. In saucepan or deep-fat fryer heat about 2 inches shortening or oil to 365 degrees. Fry scallops or oysters, a few at a time.

In the hot fat for 2-3 minutes or until golden. Drain on paper toweling, keep warm in 325 degree oven while frying remaining scallops or oysters. Serve with lemon or lime wedges, if desired. Makes 4 servings.

These were delicious! I used Old Bay Seafood Seasoning instead of salt with the flour and used some liquid crab boil instead of water in the egg mix. I made homemade cocktail sauce with ketchup, horseradish, plus a dash of worcestershire sauce, a little lemon juice and some tobasco sauce.
