“BANANA-BLUEBERRY BREAD” IS IN:

BANANA-BLUEBERRY BREAD 
1/2 cup (1 stick) butter
1 cup sugar
2 eggs
1 cup mashed ripe bananas
1 cup frozen blueberries
1 1/2 cups all-purpose flour
1 tsp. vanilla
1 tsp. baking soda
1/4 tsp. salt
1/2 cup quick cooking oats
1/2 cup nuts (optional)

Preheat oven to 325°F degrees.

Grease and flour 2 loaf pans. Cream together butter and sugar. Beat in eggs. Add mashed bananas.

Measure flour, reserving 2 tablespoons of flour to coat blueberries.

Stir baking soda and salt into flour, mixing well. Stir in oats. Fold into banana mixture. Stir in vanilla.

Sprinkle the 2 tablespoons flour over blueberries, then fold into batter. Stir in nuts.

Transfer batter to loaf pans.

Bake at 325°F for about 50 minutes.

Great recipe! My sister and I ate a whole loaf in less than a day. We used fresh blueberries and it turned out great. It really only takes one loaf pan. It ended up 2 half loafs in 2 pans.

Very good! Like the fruit and oats added for texture. I substituted honey for sugar and baking powder for soda; ran out of sugar but baking powder I thought would raise it more. Anyway neighbors loved it! Thanx much!

Fabulous! Hint. If you don't have quick oats on hand, substitute 2 (15.1 oz. ea.) packages of Quaker instant maple and brown sugar oatmeal. I left the flavor of one intact but sifted the flavorings from the other. These two equalled the 1/2 cup. I added chopped walnuts.

This recipe in it's original form I am sure is as delicious as the way mine turned out. I appreciate that it calls for only one cup of blueberries and one banana. More commonly I have this on hand. Thank you for posting it!
