TUNA PATTIES 
2 (6 1/2 or 7 oz.) tuna (drained & flaked)
3 c. bread crumbs (6 slices fresh)
2 eggs
4 tsp. grated or finely chopped onion
1/2 tsp. salt
1/2 tsp. pepper
2 tbsp. lemon juice

Mix ingredients. With hands shape into patties. Fry in 10 inch skillet with 3 tablespoons olive oil. Brown patties on both sides about 4 minutes on each side or until browned. Serves 3.

This is similar to the recipe my mom made growing up but there is way too much breadcrumbs in this one. I only used 2 cups and it was still too much. I will start with one cup next time and add if I need.

I used fresh bread in this. To much lemon juice for this recipe will make it soggy and then you have to use more bread crumbs. All in all it was a quick fix and very good.

I actually use some oatmeal when making mine but did add some dry bread crumbs this last time. I love mackerel and tuna patties!!
