GREEN TOMATO BREAD | |
2 eggs 1/2 c. firmly packed brown sugar 2/3 c. apple cider or apple juice 2 1/4 c. all-purpose flour 1 1/2 tsp. baking powder 1 tsp. baking soda 1/3 c. melted and cooled butter 1/2 tsp. salt 1 1/4 tsp. cinnamon 1/2 tsp. ginger 1 1/2 c. seeded chopped green tomatoes 3/4 c. chopped walnuts Sift together flour, baking powder, salt, soda, cinnamon. Beat eggs, sugar, butter and cider; add flour mixture. Stir just until blended. Fold in chopped green tomatoes and walnuts. Pour batter into greased and floured loaf pan. Bake at 350 degrees for 55 minutes or until wooden pick inserted in center comes out clean. Cool bread in pan 10 minutes; remove from pan and cool completely on a wire rack. Yield: 1 loaf. |
