1 lb. diced stew beef (venison, roast opt.)
1 lb. chop meat
2 (8 oz.) cans stewed tomatoes or 4 to 6 med. tomatoes
1 (16 oz.) can tomato sauce
1 med. onion, diced
2 med. peppers, diced
1 (16 oz.) can kidney or pinto beans
16 oz. shredded cheddar cheese
2 pkgs. chili season or 1 tsp. chili powder, 1 hot pepper, sliced and 8 drops hot sauce
Oyster crackers or saltines, jalapeno corn bread

Brown stew beef and hamburger. Add onions and peppers until softened. Drain fat. Add canned tomatoes and seasonings. Add all other ingredients except cheese. Cover and cook over low to medium heat for several hours. Mix in cheddar cheese and serve over cooked white rice and/or with crackers, oyster crackers or corn bread.

Goes along way. Great leftover idea - mash with potato masher and add Monterey Jack or cheese until thick. Heat in microwave and serve with nacho chips.
