1 (10 oz.) pkg. frozen chopped spinach, thawed
1/2 c. shredded Mozzarella cheese
1 tbsp. grated Parmesan cheese
1/2 tsp. lemon juice
1/4 tsp. pepper
1/8 tsp. salt
1/4 tsp. leaf oregano
6-7 fresh flounder fillets (1 1/2 lbs. total) (sole works well also)
2 tsp. butter
2 tsp. Italian style bread crumbs
Preheat oven to 350 degrees. Grease small shallow baking dish.
Stir together spinach, Mozzarella, Parmesan, lemon juice, pepper, salt and oregano in bowl. Halve each flounder fillet lengthwise. Spread spinach mixture over each dividing equally. Roll up jelly roll style and secure with toothpick.
Place seam side down in dish. Dot with butter and sprinkle with bread crumbs. Bake 20-25 minutes or until fish is opaque in center. Can also microwave for approximately 7 minutes.
