LEFSE 
5 c. hot mashed potatoes
1/3 c. butter or shortening
1 tbsp. salt
1 tsp. sugar
1 c. flour or enough to make a fairly firm dough

Blend butter, sugar, and salt into hot potatoes. Add enough flour and roll out thin on floured board or baking sloth. Bake on hot lefse grill or griddle. While warm, stack and cover with towel to keep them soft.

Lay lefse flat and butter and sprinkle with cinnamon and sugar and roll up and bake until warm. Cut into pieces and eat. Yum!
