|FRESH APPLE BREAD|
2 cups all purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon each cinnamon and ginger
1/3 cup butter or shortening
1 cup sugar
1/3 cup orange juice
3/4 cup Craisins and/or raisins
1/2 cup chopped pecans or walnuts
1 cup finely chopped apples
1 tablespoon freshly grated orange rind
Preheat oven to 350°F.
Whisk together flour, baking powder, baking soda and salt.
In a mixing bowl, cream together shortening, adding sugar gradually. Stir in egg and beat thoroughly.
Add half of the dry ingredients (the flour mixture), beat for 20 seconds; add the orange juice and stir in. Add the other half of the flour mixture and remaining ingredients. Beat for 30-45 seconds.
Butter and dust with flour two loaf pans; about 3/4 full with batter, spread evenly in pan.
Bake at 350°F for about 45 minutes or until done.
