1 lb. round steaks, chicken or pork
1/8 c. soy sauce
1 c. cut shallots
1 lb. Chinese noodles/spaghetti
6 halves boiled eggs
Pepper (black) to taste
1 bunch washed spinach
Cut meat into 1/4 inch strips. Quick fry meat in pan or wok. Using a 4-quart pot, combine soy sauce and spinach to 3 quarts water. When liquid comes to a boil, drop in meat. Reduce heat and cook for 25 minutes.
Cook noodles (spaghetti) according to directions on package. Pour soup over noodles into individual serving bowls. Garnish with shallots and egg halves. Additional soy sauce and shallots may be added to taste. Serves 6.
