COLONEL'S LADY'S HAM 
1/2 lb. ham, cut in strips
2 tbsp. butter
1/2 c. chopped onion
2 tsp. flour
1 c. sour cream
1 (6 oz.) can mushrooms
1 1/4 c. rice

Cook rice and set aside. Saute ham strips and onion in butter until onion is tender. Sprinkle flour over ham and stir in, making sure heat is low. Gradually stir in sour cream and mushrooms. Stir while it thickens. Serve over rice. (A good way to use leftover ham.)
