2 tbsp. butter
2 tbsp. flour
1/2 tsp. salt
2 c. milk
2 c. (8 oz.) shredded Cheddar cheese
2 (7 1/2 oz.) cans Alaska King crab, drained and flaked
3 hard-cooked eggs, grated
1/2 c. finely chopped onion
Dash of ground red pepper
1 tbsp. snipped parsley

Melt butter in a saucepan. Add flour and salt. Gradually add milk, stirring until thickened and smooth. Add cheese, stirring until blended. Blend in remaining ingredients, except parsley. Put into a 1 1/2 quart casserole. Bake, covered, at 325 degrees for 15 minutes, or until heated through. Sprinkle with parsley. Serve with Melba Toast or toast points. 25 servings.
