CHICKEN MARSALA 
2 tbsp. olive oil
3 cloves garlic
1 c. marsala
4 boneless chicken breasts

Optional (use any or all) :

1 c. sliced mushrooms
1/2 c. sliced onion
1/2 c. sliced green pepper

Heat olive oil in large skillet. Add garlic and saute for a minute or two. Add chicken and brown on both sides. Add marsala and any options. Cover and cook until done, about 10 minutes.

Serve over spaghetti with grated Parmesan. Add a salad and garlic bread and the menu is complete.
