JUMBO STUFFED SHELLS 
12 oz. jumbo shells
1 1/2 lbs. ricotta cheese
1 (8 oz.) pkg. grated Mozzarella cheese
2 eggs, slightly beaten
1/2 tsp. salt
1/8 tsp. pepper
1 tsp. chopped parsley
1/4 c. grated Parmesan cheese
Garlic, oregano & nutmeg to taste
5 c. tomato or meat sauce

Cook jumbo shells in 6 to 8 quarts of rapidly boiled water for 12 to 15 minutes. Combine rest of ingredients and stuff into shells that have been rinsed thoroughly in cold water and drained. Fill baking pan with thin layer of sauce and add stuffed shells side by side. Top with sauce and grated cheese. Bake in 350 degree oven for 25 to 30 minutes and have dish covered with foil while cooking.
