ARTICHOKE NIBBLES | |
2 jars (6 oz. each) marinated artichoke hearts 1 sm. onion, finely chopped 1 clove garlic, minced 4 eggs 1/4 c. fine dry bread crumbs 1/4 tsp. salt 1/8 tsp. pepper 1/8 tsp. oregano 1/8 tsp. liquid hot pepper 2 c. shredded Cheddar cheese 2 tbsp. minced parsley Drain marinade from 1 jar of artichokes into a 7 x 11 inch baking dish. Drain other jar reserving marinade for other uses, if desired. Chop artichoke hearts and set aside. Add onion and garlic to reserved marinade. Cover with wax paper and microwave on high for 3 minutes or until onions are soft. In a small bowl, beat eggs lightly. Add bread crumbs, salt, pepper, oregano and hot pepper. Stir in cheese, parsley and artichokes. Pour egg mixture into onion and stir well. Spread mixture evenly in baking dish and bake at 350 degrees for 30 minutes. |
