2/3 c. sugar
1/4 c. reduced fat butter, softened
3/4 c. egg substituted or 1 low cholesterol egg and 2 egg whites
1 c. mashed ripe bananas, about 2 lg.
1/4 c. water
1 2/3 c. all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
1/4 tsp. baking powder

Oven 350 degrees. Spray loaf pan with vegetable cooking spray.

Beat sugar and butter in medium bowl, until light and fluffy. Beat in egg substitute (or egg and egg whites) bananas and water on low speed until well blended.

Stir in remaining ingredients just until moistened. Pour into loaf pan.

Bake 8"-60 minutes, 9"-45 to 50 minutes, or until toothpick comes out clean.

Cool 5 minutes. Loosen sides of loaf from pan. Remove from pan and cool completely before slicing if you can resist.
