|PARMESAN FRIED FISH|
1 lb. fresh or frozen fish fillets
1/4 c. all-purpose flour
Dash garlic salt
1 beaten egg
1/4 c. milk
1/2 c. bread crumbs
2 tbsp. grated Parmesan cheese
2 tbsp. finely snipped parsley
1/2 c. oil or shortening for frying (olive oil works best)
Thaw fish if frozen. Rinse and pat dry with paper toweling. Combine flour and garlic salt and set aside. Blend egg and milk. Combine bread crumbs, Parmesan and parsley. Coat fish with flour mixture. Dip in egg mixture, then coat with crumb mixture.
In large skillet, add fish, in single layer to hot oil. Fry over medium heat for 4-5 minutes per side until fish flakes when tested with a fork. Drain on paper toweling. Garnish with lemon slices. Serves 3-4.
