BANANA WALNUT CAKE 
2/3 c. mashed banana (mash ripe banana with a fork)
1/2 c. butter, softened
3 lg. eggs
3/4 c. water
2 c. unbleached white flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1 c. chopped walnuts or 1/2 c. walnuts and 1/2 c. raisins

In a mixing bowl beat together mashed banana and butter until creamy. Add eggs and water. Beat well. Stir in flour, baking powder and soda, and cinnamon. Beat until smooth. Add chopped walnuts.

Spoon batter into an oiled and floured 9x13 inch baking pan. Spread batter evenly in pan. Bake at 350 degrees for 20 minutes or until a knife inserted comes out clean. Cool and cut into squares. Serves 8-10.
