2 tbsp. olive oil
2 lbs. chicken (mixed parts)
1 onion, sliced
2 cloves garlic, crushed
1 c. mushrooms, sliced
1 (16 oz.) can whole tomatoes, chopped
1/2 c. sliced ripe olives
1/3 c. red wine
Salt and pepper to taste
1 pkg. med. noodles or egg bows

In a large skillet, heat oil and brown chicken. Add onion, garlic, and mushrooms; cook until vegetables are tender. Add tomatoes/liquid, olives, wine, salt, and pepper. Simmer, covered, 1 hour or until chicken is tender. To serve, arrange chicken and sauce over cooked noodles.
