CRANBERRY ORANGE MUFFINS 
1 c. fresh cranberries, chopped
1/4 c. sugar
1 orange
4 tbsp. (1/2 stick) unsalted butter, softened
1/3 c. orange juice
1 egg
1 1/2 c. flour
1/2 c. sugar
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt

Toss cranberries and 1/4 cup sugar; let stand 15 minutes. Thinly slice and chop yellow part of orange peel. Blend with chopped orange segments, softened butter, orange juice and egg.

Sift together flour, 1/2 cup sugar, baking powder, baking soda and salt; add to orange mixture and stir just until dry ingredients are moistened. Stir in cranberry mixture. Spoon batter into greased muffin tins, filling them 2/3 full. Bake at 400°F for 15-20 minutes.

Makes 16 muffins.

The is THE BEST orange cranberry muffin recipe! Using the whole orange makes it moist and adds fiber. I save some of the orange rind to make a light glaze with some powdered sugar and a few tablespoons of OJ, then drizzle over the cooled muffins. UMMMM!!!!
