MARYLAND CRAB CAKES 
1 1/2 lb. crab meat
6 tbsp. butter
1 onion, chopped
1 c. fresh white bread crumbs
3 eggs, beaten to mix
1/4 c chopped parsley
1 tsp. dry mustard
1/2 tsp. paprika
Salt & pepper to taste
Little heavy cream
Seasoned flour (1/4 c. flour, 1/4 tsp. salt, pinch of pepper)
1/4 c. butter

In skillet melt 6 tablespoons butter and fry onion until soft. Add crab meat with bread crumbs, eggs, parsley, mustard, paprika, salt and pepper. Stir mixture, add enough cream so it will hold together. Form 6 to 8 small cakes. Roll in seasoned flour and fry in butter over moderate heat for 5 minutes each side. Drain and serve at once.
