1 (1 lb.) box powdered sugar
1/4 lb. coconut
4 eggs
1 1/2 teaspoons baking powder
1 tablespoon butter
1 1/2 cups flour
1/2 teaspoon pure vanilla or almond extract (optional)

Beat eggs until light and fluffy, gradually adding sugar. Mix together flour and baking powder and add.

Stir in the grated or shredded coconut and extract. Drop small portions with a teaspoon onto well buttered cookie sheet leaving at least 2 1/2-inches space between them to allow for spreading.

Bake in a preheated 350F oven from 10 to 15 minutes. Keep in airtight container in a dry place.
