CARAMBOLA BREAD
3 eggs
1 c. oil
2 tsp. vanilla
3 c. flour
1/2 tsp. baking powder
1 c. chopped nuts
2 c. sugar
2 c. chopped fine carambola
1/4 tsp. cloves
1/4 tsp. cinnamon
1/4 tsp. salt

Beat eggs until light and foamy; add sugar, oil, carambola, and vanilla. Mix lightly, but well, by hand. Combine dry ingredients, sifted together, to first mixture and blend well. Stir in nuts and pour into 2 greased and floured 9 x 9 x 3 inch pans. Bake at 350 degrees for 15 minutes; lower heat to 325 degrees, and continue baking for 45 more minutes. Do finger test to tell if done. Makes 2 loaves.

I've made a similar recipe to this one, previously. I used 1 cup SR Flour, 1 cup wholemeal SR Flour, 1 cup Plain Flour and reduced the sugar to 1 cup Caster Sugar and 1/2 cup Brown Sugar. The mix still tastes very sweet before baking. It's in the oven, so I cannot comment further.
