AUNT MURIEL'S CHOCOLATE CHERRY
CUPCAKES
 
1 c. granulated sugar
1/2 c. butter, softened
2 squares unsweetened baking chocolate, melted
2 eggs
2/3 c. flour
1/2 tsp. baking powder
1/2 c. chopped nuts
1/2 c. maraschino cherries, halved & drained well
1 tsp. vanilla

Cream sugar and butter. Add melted chocolate and eggs and beat. Add flour and baking powder. When well mixed, add nuts, cherries, and vanilla. Fill paper lined muffin tins half full. Bake at 375 degrees for 17 minutes. Frost with the Chocolate Frosting below.

FROSTING:

1 1/4 c. confectioners' sugar (sifted)
2 tbsp. butter, softened
1 square unsweetened baking chocolate, melted
2 tbsp. hot, strong coffee
1/2 tsp. vanilla

Cream butter and chocolate. Add the sifted sugar and then the coffee and the vanilla. Beat well until a smooth consistency.
